Side note – this batter can be used to make waffles too! Also you can substitute thr flour with ground oat flour instead, but you may need to tweak a few things to get the right consistency and flavor.

Made without eggs, milk, and butter.

Ingredients
Flax egg
Wet ingredients
Vegan buttermilk

Instructions
  1. Mix the gluten free flour, baking soda, baking powder, and sea salt together.
  2. Pour the apple cider vinegar or juice of 1 small lemon into almond milk and let sit for 10 minutes until curdled.
  3. Mix flaxseeds with 3 tbsp of water and let stand for 10 minutes until mixture becomes gel like.
  4. Stir vanilla extract, oil, and maple syrup, with the curdled almond milk. Then pour into the gluten free flour mixture and stir.
  5. Add the flax egg into the mixture and stir.
  6. Pour batter into a lightly greased or oiled skillet on medium heat and cook for a couple minutes per side.
  7. Top with maple syrup, vegan butter, and desired toppings!
